Lemon Curd

If you bought (or have) Meyer lemons and you're looking for something to do with them, you should try making lemon curd. That's what I did with the lemons I bought last week. If you've never had it, lemon curd is an irresistible confection of lemon juice (and zest), butter, eggs, and sugar. Use it on muffins, scones, cake, English muffins, toast, whatever you like. Just be sure to have a friend in mind to give some away to, because if not you may be tempted to eat it all.

Also if you have way to many eggs and need something to make with a bunch of them… But I see the recipe that you posted doesn’t use that many. I found that angel food cake requires 12 egg whites and was looking for something to do with the yokes and made a lemon curd recipe with 8 yokes. I can’t wait for my meyer lemons to get ripe though, maybe i’ll try this version too! :)

Yeah, this recipe does not make a lot - maybe two small jars worth. But it’s tasty!
